Burrito de Huevos: scrambled eggs with sweet yellow corn, roasted red peppers and onions, wrapped in two flour tortillas served with black beans and smothered in spicy red salsa and Vermont white cheddar.
Breakfast BLT: grilled sourdough topped with herb mayo, mixed greens, tomatoes and two over medium eggs with crisp bacon. Served open-faced with your choice of grits or potatoes.
Tofu Scramble: seasoned tofu sautéed with mixed veggies and served with whole wheat toast and your choice of grits or potatoes.
Hoppin’ Highland: Louisiana style black-eyed peas (vegetarian) served over stone-ground grits, topped with a Vermont white cheddar crisp.
Smoked Salmon Plate: slices of smoked salmon on a plain bagel with cream cheese, red onion slices, fresh tomatoes, caper berries and mixed greens.
